Introduction
A bright potato salad with cucumber, bell pepper, red onion, feta, and a lemon-olive oil-balsamic dressing. Serve with pita wedges.
Ingredients
- 2 pounds potatoes
- 1 green bell pepper, cubed
- 1 cucumber, sliced and quartered
- 2/3 cup sliced red onion
- 8 ounces crumbled feta cheese
- Juice of 1 lemon
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- Generous salt and pepper
- 3 pita breads, cut into wedges
Directions
- Bring a large pot of heavily salted water to a boil. Add whole potatoes; cook until tender but still firm, about 30 minutes. Drain, cool, and slice.
- In a large bowl, combine cooled potatoes, green pepper, cucumber, red onion, and feta.
- Whisk lemon juice, olive oil, balsamic vinegar, salt, and pepper. Pour over the salad and toss to coat. Adjust seasoning. Serve with pita wedges if desired.
Tips
- Salt the cooking water generously for seasoned potatoes; cool before dressing to avoid absorbing too much vinegar at once.
- Taste dressing for balance; add more lemon or salt if needed to lift the feta and veggies.
